RESILIENCE OF UKRAINIAN RESTAURANT BUSINESS ENTERPRISES IN THE CONDITIONS OF WAR

Abstract

Restaurant business enterprises belong to the service sector that meets the physiological needs of a person for nutrition. It is known that this type of business is particularly sensitive to various types of crises: the COVID-19 pandemic, Russia's military aggression against Ukraine. That is why the issue of ensuring the resilience of restaurant business enterprises in wartime is relevant today. The purpose of the study is to examine the resilience of Ukrainian restaurant business enterprises in wartime and find ways to ensure it. This study used the method of interviewing restaurant managers. Respondents were selected through non-probability purposive sampling. The results of the study indicate that in order to ensure the resilience of restaurant business enterprises, it is necessary to take into account a list of components: financial, operational, technological, organizational, reputational and business models. The survey of restaurateurs revealed positive and negative factors that affect the resilience of enterprises in this area of activity; based on these factors and taking into account the literature review, the basic strategic objectives that should be taken into account when restoring and adapting an enterprise were formed. The state of recovery of restaurant business enterprises in the context of war was also studied. According to the survey, only 20% of enterprises were able to fully resume their operations and adapt. 10% of enterprises did not recover at all. 20% have serious problems with recovery and adaptation. 50% of enterprises have partially recovered and have some problems with adaptation and effective operation. The main characteristics and stages of the crisis in the context of war were identified. Conclusions and discussion. A model of ensuring the resilience of restaurant business enterprises has been formed, which contains the main components: resilience components, strategic objectives, stages and characteristics of the crisis, key aspects of ensuring resilience. The application of the developed model will facilitate the consideration of the proposed components in the development of an adaptation strategy and the choice of directions for the transformation of restaurant business enterprises, which will ensure effective recovery and functioning in a crisis. The value of the study lies in the possibility of applying methodological recommendations for ensuring resilience for owners of restaurant business enterprises in wartime.
